I got an Americano and drank it black. One day I asked for them to use Foundation blend (medium roast) for the shot and the next day I got the 1852 blend (dark roast). If you don’t ask the default is Foundation and it was good but the 1852 was my favorite. I got the tip for going here from a local who frequents this spot. She highly recommended the coffee but went somewhere for pastry.

Finally found it! After a few days of struggling to find a proper cup of specialty coffee in Montreal, I finally landed at Structure Coffee Roasters — and it did not disappoint. Smooth, balanced pour-over (V60) with real flavor clarity — something I had been missing since I arrived. Baristas knew what they were doing, the beans were clearly high quality, and the whole vibe was calm and minimal in the best way. If you’re into third-wave coffee and have been searching for something beyond the usual espresso chain scene, this is your spot. Highly recommend for anyone serious about their coffee!

I went there on sat afternoon so dint get to try any bakery items as almost everything was finished. So we tried their amazing latte and mocha and both were perfect. The taste was really smooth . Sitting here is decent and environment is really amazing. Music was perfect . It was a really calm and relaxing experience. Baristas were smiling and welcoming.

We tried the chocolate chip cookie and a latte with macadamia nut milk. The chocolate chip cookie was delicious— sweet but well-balanced with the flakey salt on top. The latte was also well-made and featured their own coffee beans (the 1852 bean) which were on the nutty and smoother side. The atmosphere was nice— plenty of seating, open, and well-lit. Nice hang out and study spot. They also had a record player playing in the background which added a nice ambiance.

I discovered this place a month ago and it serves the best coffee and matcha! I highly recommend for anyone to checkout. Plus the workers are super nice and helpful.

Nice coffee, classy modern decor. Young adults take up tables with laptops so activly buying customers need to get to go cups as no tables available. Wondering who brings in money, buying in 2 cups of coffee sitting there the whole day or a to go customer just wanting to drink in peace for a few minutes.
